Fluffy French Toast





1/4 cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon white sugar
12 thick slices bread

1.Measure flour into a large mixing bowl. Slowly whisk in the milk.


2.Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.





2.Heat a lightly oiled griddle or frying pan over medium low heat.

3.Soak bread slices in mixture until saturated.


4.Cook bread on each side until golden brown. Serve hot.

Tamale Pie




1lb ground beef
1 Cup chopped green pepper
1 Cup chopped onion
3 cloves garlic,minced
1 15oz can Kidney beans drained and rinsed
1 15oz can Black beans drained and rinsed
1 15oz can pinto beans drained and rinsed
1 11oz can hot and spicy v8 juice
1 1/4 tsp Chili powder
3/4 tsp cumin
1 8oz package corn bread mix
1/2 cup shredded Mexican blend cheese
1-2 T chopped cilantro

Optional toppings
tomato's
avocado
salsa
sour cream

1. Grease a 9x13 pan and preheat oven to 400
2. Brown ground beef in pan with green pepper onion and garlic until there is no more red to the meat and veggies are tender.

3. Stir in kidney,black,pinto beans,v8 juice,chili powder and cumin. Heat through Pour into the prepared 9x13 pan.

4. Prepare the corn bread mix according to package add the cheese and cilantro mix well.

5.Spread corn bread mixture evenly over the meat and bean mixture in pan.

6. Bake uncovered for 20-25 min or until topping is golden brown.

7. Serve with any topping that you prefer.

Godfather's Cinnamon Streusel Dessert Pizza

* So my husband decided to get in on this food blog and made us this yummy dessert pizza the other night. And yes he even made the crust homemade :)



Pizza crust or homemade dough. (Recipe to come in a future post.)




1 TBSP butter, melted (or 1 TBSP oil)
Cinnamon

Streusel
(makes enough mix for 3 pizzas)
1/2 cup plus 1/3 cup bread flour
1/3 cup white sugar
1/8 cup brown sugar
2 TBSP solid shortening
2 TBSP olive oil

Icing
1/2 - 3/4 cup powdered sugar
1 TBSP cream
1/2 tsp. vanilla

Mix together streusel ingredients with a pastry knife, then side aside.

To make pizza, pat dough into a 12 inch pie pan that has been sprayed with oil, then brush with 1 TBSP melted butter. Sprinkle cinnamon all around buttered crust. Top pizza crust with 1/2 - 3/4 cup streusel mix (freeze remaining streusel mix for another pizza). Bake at 460 F for 8 to 9 minutes depending on the thickness of the pizza. Cover with aluminum foil halfway through to keep streusel from burning. Mix icing ingredients until it is of a drizzle consistency. If it is too thick, then thin with a small amount of extra cream until you have reached your desired thinness.

When finished baking, top with icing in a circular pinwheel pattern. I usually ice the pizza with a sandwich bag with the end cut off.

Olive Garden Fettuccini Alfredo with chicken and broccoli



1 1/2 cup milk
1 1/2 cup heavy cream
1/2 cup imported Parmesan cheese, grated
1/2 cup imported Romano cheese, grated
6 egg yolks from fresh jumbo eggs
Salt and black pepper to taste
  1. HEAT milk and cream in a heavy bottom saucepan until it begins to simmer. Turn off heat. Slowly whip in cheese, then remove from heat.

  1. PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture. Slowly add egg yolk mixture back into remaining cream mixture. Place back on very low heat and continually stir until simmering. Take sauce off heat so it thickens. (This will increase temperature of egg yolks, known as tempering).

  1. SEASON to taste with salt and black pepper. Serve over your favorite pasta.
 

* I just grilled up some chicken and steamed the broccoli for the top.

Baked Turkey,Cheddar and Bacon Sandwich





2cups Original Bisquick® mix
1 cup milk
1 egg
4 ounces thinly sliced cooked deli turkey
1 1/2 cups shredded Cheddar cheese (6 ounces)
5 slices precooked bacon or real bacon bits.




1.Heat oven to 400°F. Spray round baking dish, 8x8x2 inches, with cooking spray.

2.Stir Bisquick mix, milk and egg in medium bowl with wire whisk or fork until blended.



3.Spread half of the batter in baking dish. Top with turkey, 1 cup of the cheese and the bacon. Spread remaining batter over bacon.



4.Bake uncovered about 29 minutes or until golden brown and center is set. Sprinkle with remaining 1/2 cup cheese. Bake about 3 minutes longer or until cheese is melted. Let stand 5 minutes before cutting.

* I think that this would also be great as a breakfast bread just fill it with bacon,sausage or ham with veggies and cheese

Blueberry Banana steusel bread.






2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup applesauce
1 cup sugar
2 eggs
2 teaspoons vanilla extract
3-4 medium ripe bananas, mashed
1 cup fresh blueberries

Streusel Topping..
1/2 cup brown sugar,
3 tablespoons all-purpose flour,
1 teaspoon ground cinnamon, 
3 tablespoons butter.

1.In a bowl, combine the flour, baking soda and salt. In a large mixing bowl,

2.Cream the applesauceand sugar. Add eggs and vanilla; mix well. Beat in bananas. Gradually add the dry ingredients, beating just until combined. Fold in blueberries.

3.Pour into greased pans.


4.Mix together all the steusel topping cut in butter with a pastry cutter.


5. Sprinkle equal amounts of topping onto each loaf of bread.


5.Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

banana bread



2 eggs, beaten
1/3 cup buttermilk
1/2 cup applesauce
3-4 mashed bananas
1 1/2 cups white sugar
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

1.Preheat oven to 325 degrees F 

2.Blend together the eggs, buttermilk, applesauce and bananas.





3.Sift together the sugar, flour, baking soda and salt. Add to banana mixture . Mix well.




4.Pour into prepared loaf pans


5.bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.

Lemon Cream Cake





1 3/4 cups cake flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup sugar
1/2 cup vegetable oil
6 large eggs separated
3/4 cup water
1 tablespoon lemon zest
1/2 teaspoon cream of tarter
3/4 cup white sugar


For Filling
1 cup heavy whipping cream
2 cups prepared lemon pie filling 

1. For Cake: Preheat oven to 350 degrees.
2. In a large bowl, combine flour, baking powder, salt and 1/2 c sugar.

3. Add oil, egg yolks, water and lemon rind and beat with electric mixer until smooth.


4. In a small bowl, beat egg whites and cream of tartar until peaks form.



5. Gradually add 3/4 c sugar and beat until peaks are very stiff and shiny.

6. Fold in 1/3 of egg whites to batter, then quickly fold in remaining whites until no streaks remain.

7. Pour batter into ungreased 10" tube pan.

8. Bake at 350 degrees for 55-60 minutes or until tests done.

9. Invert cake and cool completely in pan.

10. Remove cake from pan.

11. For filling: Beat whipping cream to stiff peaks and fold in lemon filling.

12. Chill until stiff.
13. Slice cake horizontally into 2 equal layers.

14. Fill layers with filling.

15. Can also add fresh or frozen raspberries to the filling.
